For Green Tea Preparation put tea leaves into the tea pot first. Use 3 gms of leaf for every 8-12 ounces of water. Pour medium temperature water at 65 to 800 C / 150-1750 F or pour 70% hot water first, immediately followed by the 30% cold water at room temperature. Allow to brew for 2 to 3 minutes.
During Brewing, leaving the tea pot open is critical for green tea preparation. After 2 to 3 minutes filter and taste by adding 2 or 3 drops of lime or mint.
